Grouper is good! Not cheap in the stores either... Here are a couple of my standard recipes for any fish. These will work well with grouper
Prep the fish
For any of these recipes you can pan sear the fish in a light flour or just leave it plain. Grouper is a big piece of meat so unless you are gona feed an army it is best to fillet.
Wash fillet with rice wine or saki & let it sit in the saki for about 10 to 30 min. pat dry. pan sear fillet but do not cook all the way through, put it in an oven baking dish. If you are not going to pan sear with flour then season your fillet & put it in an oven baking dish.
Recipe #1
Fish Monterey
add oregano if you want more of an italian flavor
Chop medium to fine
onion, tomato, garlic, bell pepper, jalapeenies, cilantro & parsley.
squeeze lemon on the fish & season with toni satcheries & a little fajita seasoning on both sides. put in a buttered oven baking dish & smother with all the chopped vegies. put a couple of pads of butter on top of the veggies & cover with foil & bake at 375 till fish is done. If you like you may sprinkle a little monterey jack cheese on top & melt under broiler. serve with rice & lemon wedges.
Recipe #2
Pan Seared Garlic Spinach Fish With Feta
fresh basil in this will be good too.
chop medium to fine
garlic & spinach pan sear in a pan with olive oil & butter & a little salt & pepper. Place it on the bottom of a oven baking dish.
prepare fish
clean with saki & pat dry. season fish with lemon juice, garlic powder & a little tony satcheries. cover in flour & sear in pan with butter & olive oil. Do not cook through. Place on bed of spinach. Sprinkle fish with chopped green onions, parsley & lemon slices. Bake in the over uncovered till fish is done at around 350. Sprinkle with feta cheese if you like it. Serve with pasta & lemon wedges.
